A nutrient-packed meal for gentle detoxification
This vibrant Mediterranean Skillet features ingredients that support natural detoxification: folate-rich spinach, bitters from lemon, cynarine from artichoke, healthy fats from olives and turkey, and protein full of B6 (turkey). It’s both nourishing and bursting with flavor!
Hesperetin, is an antioxidant (flavonoid) found in citrus fruits such as lemons, oranges, grapefruit, tangerines, and pomelos. It has anti-inflammatory properties, improves symptoms of osteoporosis by encouraging bone building (osteoblasts) and has many anticancer abilities. Hesperetin can suppress tumor formation by targeting cellular proteins and altering signaling between receptors. This flavonoid also encourages apoptosis (the natural death of abnormal cells) by downregulating estrogen receptor signaling, and reduces the spread of cancerous cells to other organs (metastasis).
*Allicin is the compound responsible for garlic’s superfood qualities. When garlic is pressed/crushed, alliin (protein fragment) and alliinase (heat-sensitive enzyme) are combined, and over the space of about 10 minutes, create allicin. If you cook the garlic right after pressing, roughly 90% of the alliinase enzyme is destroyed. Waiting allows the max amount of allicin to be produced and the benefits reaped!
Mediterranean Skillet
Servings: 6 · Prep Time: 10 min · Cook Time: 20 min
Ingredients
- 4 cloves organic garlic, minced*
- 2 tbsp organic extra virgin olive oil, divided
- 1 organic red or yellow onion, diced
- 1 tbsp dried basil
- 1 tbsp dried dill weed
- 2 tbsp dried parsley
- ½ tsp ground black pepper
- ½ tsp sea salt
- 14 oz can organic artichoke hearts, quartered
- 1 cup organic grape tomatoes, halved
- Juice and zest of 1 organic lemon
- 4 cups fresh organic spinach
- ½ cup kalamata olives, halved
- 1.5 lbs. ground organic pasture-raised turkey
For garnish:
- ¼ cup vegan feta cheese (Violife)
Instructions
- Mince the garlic and set aside for at least 10 min. Dice the onions and halve the olives and grape tomatoes.
- Heat 1 tbsp of the oil in a large skillet over medium heat. Add the onion and cook for 5 minutes, until onion is translucent.
- Add the herbs and seasoning, artichoke hearts and tomatoes and cook, stirring occasionally, for an additional 3-4 minutes.
- In a small bowl, zest then press the lemon until you have about ¼ cup of juice. Set aside.
- Add the remaining tbsp of oil to the pan, then stir in the spinach and cook for about 1 minute, until spinach is wilted.
- Mix in the olives, turkey, and lemon juice and stir to combine. Cook for 1-2 minutes to let the flavors combine.
- Garnish the mixture with feta and serve.
