Turkey Taco Salad

This is one of my favorite Mexican food-inspired recipes. 

In general, I love the flavors of Latin American food. The herbs and spices are flavorful and rich, as well as potent in anti-cancer properties. 

This recipe combines my love of this food, with the principles of an anticancer diet. 

That means the beans, rice, and corn are omitted. 

While that may disappoint some of you, the bright side is that these omissions come with significantly less bloating, gas, and discomfort.

It also means we can replace those foods with lighter, much more nutrient-dense and anticancer ingredients.

Turkey Taco Salad

Cook Time: 20 min

  • Calories: 330
  • Fat: 18.2 g
  • Carbs: 27.3 g
  • Fiber: 7.2 g
  • Sugar: 3.5 g
  • Protein: 6 g

Ingredients

  • 4 cloves organic garlic, minced
  • 1 tbsp extra virgin olive oil
  • 1 small yellow onion or 4 shallots, diced
  • 16 oz ground organic turkey
  • 2 tsp ground oregano
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • ½ tsp ground turmeric
  • 1 tsp black pepper
  • Sea salt to taste
  • 1 medium organic bell pepper, diced
  • ¼ cup organic cherry tomatoes, sliced
  • ¼ cup vegan mozzarella, shredded
  • ½ cup organic spinach
  • ½ cup organic baby kale
  • 2 organic black-skinned avocados, cubed
  • ½ cup organic pico de gallo mix

Instructions

Prep

  1. Mince garlic in a press and leave to rest for 10 minutes.
  2. Dice the onions and bell pepper and slice the cherry tomatoes.

Cook

  1. In a medium skillet, heat the oil over medium heat. Add the onions and cook until translucent.
  2. Add the turkey, spices, and garlic when ready. Cook until the meat is barely pink, about 5 to 7 minutes.
  3. Add the bell pepper and cherry tomatoes, stirring to coat with spices.
  4. Stir in the cheese to melt it.

Assemble

  1. Divide the greens into bowls and top with the turkey taco mixture, cubed avocado, and pico de gallo.
  2. Enjoy.

Storage

Store leftovers in a glass container if possible.

Refrigerator: Up to 5 days
